A Simple Spring Starter for Effortless Entertaining
Spring entertaining does not have to be complicated to feel special. In fact, some of the most memorable gatherings begin with a dish that is simple, seasonal, and thoughtfully prepared. One of our favorite ways to welcome guests this time of year is with a bright spring starter built around roasted asparagus, whipped goat cheese, lemon zest, and a drizzle of hot honey.
It is the kind of dish that looks beautiful on the table, comes together with very little stress, and offers that perfect balance of fresh, creamy, savory, and just a touch of sweetness. Whether you are hosting a private dinner, a small celebration, or a relaxed evening with friends, this is the kind of appetizer that sets the tone immediately.
Roasted Asparagus with Whipped Goat Cheese, Lemon, and Hot Honey
Serves: 4–6 as a starter
Ingredients
- 1 bunch fresh asparagus, trimmed
- 2 tablespoons olive oil
- Kosher salt, to taste
- Fresh cracked black pepper, to taste
- 8 ounces goat cheese, softened
- 3 to 4 tablespoons cream or whole milk
- 1 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
- 2 teaspoons honey
- 1 teaspoon chili flakes or hot honey, plus more to finish
- Fresh herbs for garnish, such as chives, dill, or parsley
- Optional: toasted pistachios or almonds for texture
Instructions
1. Roast the asparagus
Preheat the oven to 425°F. Place the asparagus on a sheet pan, drizzle with olive oil, and season with salt and pepper. Roast for 8 to 10 minutes, depending on thickness, until just tender and lightly caramelized.
2. Prepare the whipped goat cheese
In a bowl or food processor, combine the goat cheese, cream, lemon zest, lemon juice, and honey. Blend or whisk until smooth and spreadable. The texture should be light and creamy.
3. Plate the dish
Spread the whipped goat cheese onto a serving platter or shallow plate. Arrange the warm roasted asparagus over the top.
4. Finish and garnish
Drizzle lightly with hot honey. Top with fresh herbs, extra lemon zest, and toasted nuts if using. Serve immediately while the asparagus is still slightly warm.
Chef’s Note
The beauty of this dish is in its balance. The asparagus brings freshness, the goat cheese adds richness, the lemon brightens everything, and the hot honey gives it just enough contrast to keep each bite interesting. It feels elevated, but it is wonderfully approachable.
This is also an easy recipe to adapt. You can swap asparagus for roasted carrots, broccolini, or even grilled spring peas depending on what is available and what inspires you.
At Three Peaks Catering, we love dishes like this because they reflect what good hospitality should feel like: seasonal, intentional, and welcoming. Food does not need to be overly complicated to create a meaningful experience. Sometimes it just needs to be prepared with care and shared with the right people.
If you are planning a private dinner, celebration, or gathering this season, we would be honored to help create a menu that feels just right for your table.
